Το Imperial προέρχεται από υβρίδιο οξύρρυγχου του Αμούρ και Kaluga (Acipenser schrenckii × Huso dauricus), που ενώνει δύο είδη σε ένα ξεχωριστό χαβιάρι. Αυτοί οι οξύρρυγχοι χρειάζονται συνήθως οκτώ έως δέκα χρόνια για να ωριμάσουν πριν δώσουν χαβιάρι. Ελαφρά αλατισμένο με τη μέθοδο Malossol, το Imperial είναι πλούσιο και στρογγυλό, με ζεστές, καβουρδισμένες νότες και πιο βαθιά γεύση από το Baerii.
