Royal Baerii comes from Siberian sturgeon (Acipenser baerii), one of the earlier maturing sturgeon species. It takes around seven years of careful rearing before the sturgeon is ready to produce caviar. Lightly salted using the Malossol method, Baerii is fresh, clean and gently briny. An easy introduction to the world of caviar, without compromising on character.

Firm, delicate pearls bring a gentle pop and a clean saline flavour, followed by a subtle richness and a fresh finish. Approachable enough for your first spoonful, delicious enough for your hundredth.

THE CAVIAR RITUAL

Best served straight from the tin, over ice.

Use a mother-of-pearl spoon and let the pearls rest on your tongue. Gently press them against your palate and let the flavours unfold.

Keep refrigerated. Once opened, enjoy within 24–48 hours. Do not freeze.
